Morning Glory Muffins

2 cups flour
1 ¼ cups sugar
2 tsp cinnamon
½ tsp salt
2 tsp soda
2 cups grated carrot
½ cup raisins
½ cup chopped nuts
½ cup coconut
1 apple peeled and grated
3 eggs
1 cup salad oil
2 tsp vanilla
In a large bowl mix flour, sugar, cinnamon, salt and soda. Stir in carrots, raisins, nuts, coconut and apple.
In a bowl beat eggs, oil and vanilla. Stir into flour mixture until batter is just combined.
Spoon into well greased muffin cups, filling to top or use muffin liners.
Bake at 350° for 20 minutes.
Makes 18 muffins.
